  2. Pelar y cortar las patatas en dados.
  3. Llenar con el agua una olla y poner a cocinar el vapor las patatas y la calabaza, poniendo primero las patatas y la calabaza más arriba, y taparlo. Dejarlo unos 30 minutos, tienen que quedar blandas ambas cosas, si no es así dejarlo más tiempo.
  4. Cuando la calabaza y las patatas estén hechas echarlas en un bol y reservar.
  5. Pulverizar 50 gr de harina con las tiras de piel de limón.
  6. Añadir la calabaza y las patatas y triturar y mezclar todo bien.
  7. A continuación añadir 350 gr de harina, 1 cucharada de sal, el huevo y el parmesano triturado y mezclar bien hasta mezcla homogénea.
  8. En el lugar donde vayamos a manejar la masa espolvorear harina y echar la mezcla y amasar con las manos. NOTA: si la masa se nos queda pegada a las manos añadir harina mientras la amasamos hasta que quede compacta.
  9. Hacer bolitas pequeñas redondas (o con la forma que se quiera) y reservar. NOTA: se pueden congelar si se quiere y reservar para otro día.
  10. Echar en una cacerola 30 gr de harina, 150 gr de gorgonzola, 300 ml de leche y una cucharadita de sal y mezclar a fuego lento hasta masa homogénea con cuidado que no salgan grumos a causa de la harina.
  11. Mientras tanto poner los ñoquis en una cacerola con agua hirviendo hasta que veamos que suben a la superficie, lo cual nos indica que ya están listos.
  12. Escurrimos los ñoquis y los mezclamos con la salsa. Emplastamos y... A DISFRUTAR
