  2. Mientras se nos cuece la calabaza prepararemos una bechamel. En una sartén colocamos un generoso chorro de aceite de oliva (si lo preferís mantequilla) y damos unas vueltas a la harina para que después no sepa a harina cruda, vamos añadiendo leche hasta que la bechamel tenga el espesor de nuestro agrado. Añadimos sal y nuez moscada al gusto.
  3. Cuando esté muy blanda la calabaza le quitamos el agua sobrante y trituramos con la batidora. A continuación añadimos la bechamel y mezclamos con la batidora la calabaza y la bechamel. Añadimos los dos huevos previamente batidos y mezclamos de nuevo, los huevos, la calabaza y la bechamel.
  4. Colocamos en una fuente de barro, previamente aceitada toda esta mezcla, sobre ella decoramos con queso rallado y horneamos a 180 grados hasta que la mezcla cuaje. Cuando este cuajada, gratinamos para dorar el queso.
  5. Comer calentita. Se puede hornear en cazuelitas individuales, así la presentación en la mesa quedaría más lucida.
