- En otra cazuela, ponemos aceite de oliva virgen extra a calentar, vertemos las verduras, salpimentamos y pochamos poco a poco. Dejamos que reduzcan su tamaño a la mitad.

- Añadimos el arroz, removemos y salteamos y cuando cambie de color añadimos el vino, siempre sin dejar de remover hasta que se evapore.

- Vamos echando el caldo poco a poco, con un cazo o cucharón, esperamos a que el arroz absorba la cucharada anterior antes de echar la siguiente, sin dejar de remover


- Una vez hecho esto quizá necesites m@s o menos caldo. El arroz tiene que estar un poquito duro aunque también depende del gusto de la persona. Lo suyo es no dejarlo demasiado blandito, ya que todavía tiene que reposar. Añadimos ahora el gorgonzola y seguimos removiendo hasta que quede integrado

- Dejamos unos minutos reposar con el fuego apagado. Servimos y rallamos por encima un poco de parmesano.
