- 150 gr muzarella

- Cortar la berenjena en fetas lo más finas posibles, es preferible usar un cortador pero se puede hacer con cuchilla (yo decidí cortarle los bordes de la cáscara también). Poner las fetas en un plato y agregarles una pizca de sal a todas. Dejar reposar unos 10 minutos.
- Secarlas con papel absorbente y llevarlas al horno a 180 grados en una asadera aceitada previamente (de preferencia con aceite de oliva). Dar vuelta y vuelta para que se cocinen de ambos lados.
- Para la salsa, puse la pulpa de tomate en una olla a fuego bajo, le agregué ajo picado y luego de revolverla por 5 minutos agregué la crema de leche.
- Por otro lado, para el relleno piqué champiñones y huevo duro (pero el relleno pueden variarlo a su gusto)
- Al sacar las berenjenas del horno, las pinte con salsa solo de un lado. Por encima de la salsa, agregué una feta de muzarella y puse por encima de la muzarella un poco de relleno. Luego enrollé cada una de las berenjenas y puse los rollitos en una asadera uno junto a otro.
- Cuando todos los rollitos estaban prontos en la asadera, los bañé con salsa y por encima puse el resto de las fetas de muzarella. Así lo llevé al horno por 15 minutos a 180 grados y listo!
